I'm not sure what went wrong. I made a batch of "Serrano Surprise" which sucks this time, I made a batch of "Fiesty Fresno which is decent, and I made a double batch of what was supposed to be the "Just Peachy Habanero" using the one pepper I had harvested from my plants. Now I made a double batch last time as well and it was pretty doggone good, so it wasn't just the doubling that messed it up. However, I did alter the recipe by adding carrots, which I don't think was the problem either. No, the original recipe called for ginger which I did not have last time so I made it without and it was yummy-but it did get one heck of a kick when it aged. This time I added the ginger and I think doubling that-if adding it all-ruined the sauce. So instead of 'Just Peachy Habanero", I am calling this one "Can I Call You Peaches, Ginger?", in honor of Ginger from Gilligan's Isle . . . even though I preferred MaryAnne. So next time no double batch, no ginger, but always MaryAnne!! Haha! I'll see if ithe current sauce ages better but I have doubts
