It's American Heart Health month, Go Red For Women is coming up, and it's not just the ladies that need to make sure the old ticker is operating properly for sure, even though cardiovascular disease is the number 1 killer of women, which is really pretty shocking. So there's all kinds of things we can do-and many of them are not hard at all! i do encourage you to go the main page here and read, learn and share... and possibly even win a gift card. So be a little healthier and a little richer? Sign me up for some of that action! Okay, so I can't win the prize, but I'm trying to do my part too! And really, if we're living healthier then we win anyway, right?
I found this easy recipe which I think there are probably a bazillion variations of...it's easy to make and it involves lentils, which really are not that bad! Rolls from memory like this:
couple sticks of celery-chopped
1 medium onion-diced
2 average looking carrots-chopped
1 TBS Cumin
Salt and pepper to taste (I may have gotten a little carried away with the salt)
One of those big containers of vegetable broth
1 cup lentils
I 15 ounce can of fire tomatoes (or two fresh tomatoes-might be better but I didn't have any on hand)
Dump the lentils in the broth and let that cook about 10 minutes then add in the rest and cook for like 20 minutes on medium heat. Yeah, it was that simple! Let me know how you like and/or change it up! When I make it again, I'm gonna add in some hot peppers for me . . .
