Spank who? Look tough name for me but the actual food was most excellently yummy! I don't know why I was so focused when I made it...I was dinking with recipe and trying to decide if I had enough ingredients to not double but make it enough to cover 3 peppers. Those beautiful red peppers I scored at Safeway were so big and perfect that it wouldn't of mattered and it really turned out wonderful! So as I learned, this is not vegan because of the cheese, but it was one meat -free meal that I really enjoyed.
Rocky's Spanktopia (some call it Spanakopita) Recipe
2 good looking red peppers
1/4 cup chopped shallot (what the heck is a shallot? Nobody has them here that I can tell. I think it's like an onion so that's what I used-FYI. A small whole regular onion)
About 12 ounces of baby spinach
2 or so teaspoons of chopped fresh dill and parsley. I put in quite a bit more
Some fresh basil bonus...I love me some basil.
2 cloves garlic
Pepper
3/4 cup ricotta cheese.
Roughly 7 tablespoons of feta cheese. (I got a block of it for cheap and it crumbled nicely and I just blended it in.)
A little salt
Mozzeralla for chunking across top of peppers.
Preheat oven to 400.
Heat some olive oil and drop in your shallots or onions and cook for a minute or two. Then add in the spinach a bit at a time and stir a lot until it's wilted (about 5 minutes). Dump in your dill, parsley, garlic and pepper and cook for about a minute. then put all that in a mixing bowl and add in all the cheese (save the mozzarella-we'll get to that.)
Cut the peppers in half and then rub the pepper with some olive oil and then put a little salt on there and put them in baking dish. Then scoop your spinach cheese goodness into the pepper halves. slice some mozzarella to put on top-be generous-and put in oven for about 30 minutes or until peppers are tender.
What did I leave out? Oh yeah-enjoy your meat-free dinner! I popped some asparagus in oven to have with it-really a great meal! Sorry I did not get a shot of it coming out of oven so I took a leftover picture this morning...I call it "lunch"
